Job Description

Place of work: La Cantine de Faubourg

Responsible to: General Manager

Scope and general purpose:

Responsible for the smooth running of the operation, maintain high level of service and a well-organized work atmosphere. Restaurant manager is in charge of hiring, managing the venue, supervise and continuously trains staff and ensuring a high quality service at all time to in favour of customer satisfaction.

Must be knowledgeable of:

  • Health and safety requirements
  • Food and Hygiene requirements
  • First aid
  • Menus(food, wine, cocktail, cigar)
  • Allergies
  • Risk assessment
  • Rota
  • Rules and regulations
  • Operating systems

 

 

Responsibilities:

  • Ensure 100 percent compliance with all company policies and law
  • Lead by example
  • Oversee operation of La Cantine du Faubourg
  • Ensure that smooth operation in all sections
  • Perform /supervise / control daily opening and closing procedures
  • Maintain education program
  • Change the employee book as needed
  • Implement new rules and regulations
  • Co-ordinate with general manager for everyday operation
  • Staff evaluation
  • Stock control
  • Inventory control
  • Ensure excellent communication between all departments
  • Be present in everyday life and suggest development, disciplinary action affecting team members
  • Create a strong team and take care of the employees to provide excellent costumers service
  • Maintain proper sanitation, hygiene standards and maintain effective store presentation
  • Motivate staff
  • Act in favour of the restaurant

 

  • Socialize with guest
  • Ensure a friendly work environment of all time
  • Handle and resolve complains
  • Controlling background music, lightning
  • Resolve costumer complains about food, quality of service
  • Holds daily briefing , attend and actively participate in weekly manager meetings
  • Adjust stock in EPOS during operation if necessary

Duties list

Before Service

  • Hold daily briefings
  • Check opening procedure check list and if all duties were done properly
  • Check with reception is terms of daily bookings
  • Check with bar section 68 and 86
  • Check with kitchen the 68 and 86
  • Adjust stock accordingly in EPOS
  • Organize daily setup according to reservations
  • Assure that employees are well groomed and up to company standards
  • Set appropriate music and lightning level if necessary

During service

  • Greet and fare well guest
  • Socialize with costumers
  • Get feedback if possible from every table
  • Maintain ambiance controlling lightning and music level
  • Manage front of house
  • Handle and solve complains if there is any
  • Apply discount on bills if needed
  • Be a helping hand in service if necessary
  • Keep posture and lead by example
  • Constantly check that wash-rooms are up to standards
  • Always stay on the floor and stay visible

After service

  • Supervise closing procedures
  • Revise closing duties check list and ensure that procedure was done properly
  • Follow up on hand over books
  • Supervise end of shift search
