Restaurant Manager

Role

The Restaurant Manager oversees daily operations of a fine‑dining bar and restaurant, ensuring exceptional guest service, smooth front‑of‑house and bar performance, and strong financial results. The role leads and develops the service and bar teams, maintains premium service standards, manages staffing and training, and coordinates closely with the kitchen and support departments to deliver a refined, high‑quality dining experience.

Key Responsibilities

Operations Management

 Operational Excellence

  • Oversee daily restaurant and bar operations to ensure smooth, efficient service.
  • Maintain fine‑dining service standards, sequence of service, and guest engagement protocols.
  • Ensure bar operations meet premium mixology, hygiene, and presentation standards.
  • Monitor table management, reservations, and guest flow to maximize capacity and experience.
  • Conduct daily pre‑shift briefings and ensure team readiness.

Team Leadership and People Management

  • Recruit, train, and develop FOH and bar staff to fine‑dining standards.
  • Create weekly schedules, manage attendance, and ensure adequate staffing levels.
  • Conduct performance evaluations, coaching sessions, and disciplinary actions when required.
  • Foster a positive, collaborative, and high‑performance team culture.
  • Motivate and coach team members to deliver excellent service.

Guest Experience & Service Quality

  • Maintain a welcoming atmosphere aligned with brand identity.
  • Lead a guest first culture, ensuring personalized, attentive service.
  • Handle VIP guests, special requests, and service recovery with professionalism.
  • Monitor guest feedback (in person, online, and through platforms) and implement improvements.
  • Maintain ambiance standards: lighting, music, cleanliness, table setup, and bar presentation.
  • Ensure consistent food and beverage quality.

Sales & Marketing

  • Implement promotions, happy hours, and special events to drive sales.
  • Collaborate with marketing teams on social media and local advertising.
  • Monitor competitor activity and suggest improvements.

Financial Accountability

  • Manage daily sales, revenue targets, and cost controls (labor, wastage, bar inventory).
  • Review P&L statements and implement action plans to improve profitability.
  • Oversee bar stock levels, ordering, and inventory accuracy.
  • Identify upselling opportunities and implement sales‑driven initiatives.
  • Prepare weekly and monthly performance reports.

Knowledge Management & Compliance

  • Document and update operational processes regularly.
  • Ensure meticulous record-keeping in compliance with legal and regulatory standards.
  • Conduct regular audits to ensure adherence to benchmarks.
  • Ensure full compliance with food safety, hygiene, and municipality regulations.
  • Maintain brand SOPs for service, bar operations, and guest experience.
  • Conduct regular audits for cleanliness, equipment functionality, and safety.
  • Ensure all licenses, permits, and operational documents are up to date.

Coordination & Communication

  • Work closely with the Executive Chef to align service timing, menu changes, and kitchen coordination.
  • Collaborate with the Marketing Manager on promotions, events, and brand activations.
  • Coordinate with procurement, finance, and HR for operational needs.
  • Lead weekly operations meetings and report performance updates to management.

 

Pre-requisites

  • Minimum 5–7 years of experience in hospitality, with at least 3 years in a fine‑dining leadership role.
  • Strong knowledge of premium service standards, wine, cocktails, and bar operations.
  • Proven ability to manage large teams in a high‑pressure environment.
  • Excellent communication, leadership, and guest‑handling skills.
  • Strong financial acumen and experience with P&L management.
  • Certification in food safety and hygiene is an advantage.
