Role
The Bar Manager oversees the full bar operation, ensuring exceptional beverage quality, refined guest service, and efficient team performance in a fine‑dining environment. The role manages beverage menus, inventory, cost control, staff training, and service standards while driving an elevated, consistent, and guest‑focused bar experience aligned with the restaurant’s premium brand.
Reporting to: /Director of Operations/Restaurant Manager
Key Responsibilities
Bar Operations Management
- Oversee daily bar operations, ensuring smooth workflow and readiness for service.
- Maintain high standards of beverage preparation, presentation, and consistency.
- Ensure bar mise‑en‑place, cleanliness, hygiene, and equipment maintenance.
- Enforce compliance with safety, sanitation, and responsible alcohol service regulations.
Beverage Program & Menu Development
- Collaborate with the Beverage Director or Head Bartender to design and update cocktail menus.
- Introduce seasonal beverages, signature cocktails, and premium offerings aligned with brand identity.
- Conduct regular tastings and quality checks to maintain beverage excellence.
Team Leadership & Training
- Lead, train, and mentor bartenders and barbacks to uphold fine‑dining service standards.
- Conduct pre‑shift briefings, communicate daily priorities, and ensure team alignment.
- Manage staff scheduling, performance evaluations, and ongoing skill development.
Guest Experience & Service Excellence
- Engage with guests, provide recommendations, and ensure personalized, refined service.
- Handle guest feedback professionally and resolve issues promptly.
- Build guest rapport and support repeat business through exceptional hospitality.
Inventory, Cost Control & Reporting
- Manage beverage inventory, ordering, and stock rotation to ensure availability and minimize waste.
- Monitor beverage cost percentages and implement strategies to maintain profitability.
- Maintain accurate records of consumption, breakage, and monthly stock counts.
- Work with management on budgeting, forecasting, and supplier negotiations.
Administrative & Compliance Responsibilities
- Maintain updated SOPs for bar operations and service standards.
- Ensure all licenses, permits, and compliance documents are current.
- Coordinate with suppliers, manage deliveries, and verify product quality.
Self-Learning & Development
- Engage in Training Sessions when required
- Develop detailed product knowledge
- Be fully committed and dedicated to personal development and growth, working toward the achievement of performance targets on agreed periodic basis
Pre-requisites
- At least 5 years of bar leadership experience in fine dining, or premium cocktail bars.
- Strong knowledge of mixology, spirits, wine, and beverage trends.
- Proven leadership, communication, and team‑management skills.
- Strong understanding of beverage costing, inventory systems, and operational controls.
- Ability to work under pressure while maintaining professionalism and composure.
- Certification in responsible alcohol service (preferred).

Salary : AED 11,000 – 15,000 (based on experience)
