Job Description

Portofino is looking for an experienced and creative Head Bartender / Head Barista to lead our beverage operations in Dubai. The ideal candidate must understand the local market, Dubai’s diverse audience, current beverage trends and guest preferences.

Key Responsibilities:

  • Develop and maintain an attractive mocktail, coffee and non-alcoholic beverage menu

  • Prepare classic and signature mocktails to a consistently high standard

  • Lead daily bar and coffee-station operations

  • Train the team in coffee preparation, mocktails, presentation and service standards

  • Maintain beverage recipes, preparation methods and quality-control procedures

  • Manage stock, ordering, inventory, wastage and beverage costs

  • Work with local suppliers and source high-quality ingredients

  • Maintain equipment, hygiene, safety and cleanliness standards

  • Follow market trends and introduce new beverages based on Dubai guest preferences

Requirements:

  • Proven experience in Dubai as a Head Bartender, Bar Supervisor or Head Barista

  • Strong knowledge of Dubai’s hospitality market and customer preferences

  • Advanced knowledge of classic and signature mocktails

  • Excellent knowledge of speciality and commercial coffee

  • Strong practical skills in espresso preparation, milk texturing, latte art, brewing methods and grinder calibration

  • Ability to operate and maintain professional coffee machines and grinders

  • Previous experience conducting staff training

  • Strong leadership, communication and organisational skills

  • Creative, self-motivated and commercially minded

  • Good knowledge of beverage costing, inventory and stock control

  • Fluent English; Arabic or Russian is an advantage
