An intimate and brand new modern British eatery -Artysan- is set to open in the autumn of 2023 in Ladbroke Grove near the entrance of the iconic Portobello Market. This area is steeped in art be it music, paintings or other creatives and Artysan will be a reflection of this as well as bringing an Artisan food vibe to the community with the philosphy of Respectfully Bought, Responsibly Made and Proudly Served.Who is the ideal candidate? A highly talented Head Chef who can inspire, create and steer the kitchen and its small team. The establishment is being launched by an owner to whom an ethos of sustainability, eco-friendly and being health conscious are paramount.You will be energetic and ambitious looking to improve your current career prospects to Head Chef level and should have similar values, passion, perspective with a high regard for good sourcing food with fresh, seasonal and flavoursome ingredients being utilised at the heart of the cooking. From nourishing salads, quality breads, grass fed beef to organic chicken, sustainable seafood and where possible, sourcing directly from farms, the notion of the venture is to have an appeal to market that appreciates such care and attention, which is not niche, but in fact, has wide appeal.With all day dining, the concept will open for breakfast, there will be grab-and-go featuring notable breads, sandwiches, savouries, cakes and pastries, but seated dining too, lunch service, afternoon tea, and an a la carte with imaginative, contemporary dishes.As such you will have a proven track record of working in restaurants and be able to work in a busy kitchen to the highest of standards. You will possess team leadership and motivation skills as well being a team player, have a good comprehensive knowledge of various cuisines and be able to deliver delicious well put together ingredients which are beautifully presented. Knowledge of seasonal British ingredients is a must. Essentially the head chef will be seen as a pivotal member of the leadership team and will work closely with the owner to create a customer experience that provides the highest standards in hospitality.High professional standards are required across the board, including managing the kitchen team well and maintaining hygiene standards (a minimum of level 2 food safety) to an exalted level.Further, the Head Chef must have a clear sense of direction on menu formulation, its profit-making viability, be able to adjust to the needs of the business and have easy communication skills along with being able to keep abreast of ever-evolving trends in dining and restaurants.As well as the being in charge of the broader vision of the food strategy your day to day role will include;Responsibility for the kitchens daily operations and supervising kitchen staff.Liaising with the relevant companies for food orders.Monitoring and controlling stock levels and inventory.Ensuring correct stock rotation procedures are followed.Preparing the work schedule for all kitchen staff.Monitoring portions and waste control.Capacity to work under pressure during the extreme busy period.The ability to be fully confident and have good command of the English language.
