Job Description
ROLE SUMMARY
The Restaurant Manager is the highest-ranking front of house leader in the standalone restaurant. They are accountable for the overall guest experience, team performance, revenue delivery, cost control, and the consistent upholding of REIF's brand standards. They act as the cultural steward of the restaurant, setting the tone for service excellence, team development, and operational discipline.
KEY RESPONSIBILITIES
- Lead all front of house operations across every service period, ensuring flawless execution of REIF's service standards.
- Recruit, onboard, coach, and performance-manage all FOH team members in partnership with HR.
- Drive revenue through upselling strategies, table turn optimisation, and guest retention initiatives.
- Manage scheduling, labour costs, and staffing levels in line with budgeted targets.
- Maintain control of all opening and closing procedures, cash handling, and POS system reconciliation.
- Liaise with the kitchen team to ensure seamless food and beverage flow throughout service.
- Handle all guest feedback and complaints with professionalism, resolving issues promptly and in line with brand guidelines.
- Conduct regular team briefings, training sessions, and performance reviews.
- Monitor and report on KPIs including covers, average spend per head, and repeat visit rates.
- Ensure full compliance with Dubai Municipality food safety regulations, DTCM requirements, and internal SOPs.
- Manage inventory of FOH supplies, uniforms, and equipment; coordinate procurement as required.
- Champion a culture of continuous improvement, accountability, and genuine hospitality.
- Work closely with other FOH leaders such as Beverage Manager
REQUIREMENTS
- Minimum 3–5 years of restaurant management experience, preferably in a premium casual or fine dining environment.
- Strong leadership and people development skills with proven ability to manage diverse teams.
- Solid understanding of F&B financials including P&L management, labour cost, and COGS.
- Experience operating within Dubai's hospitality regulatory environment (DTCM, Dubai Municipality).
- Excellent communication skills in English; Arabic or Japanese language skills are an advantage.
- Proficiency in POS systems and reservation management tools (e.g., SevenRooms, OpenTable).
- Preferably having valid alcohol service training certification (e.g., WSET Level 2 or equivalent RSA qualification recognised in the UAE).
- Degree or diploma in Hospitality Management preferred but not required.
