Job Description

Job Summary

The Head Waiter/Waitress is responsible for ensuring efficient food and beverage service by coordinating between the kitchen and service teams. This role requires delivering orders quickly and accurately, supporting the waiting staff, maintaining service standards, and ensuring an exceptional dining experience for all guests. The Head Waitress also plays a key role in maintaining cleanliness, assisting new joiners, and upholding the restaurant’s quality standards.

Key Responsibilities

1. Departmental Responsibilities

  • Work closely with the Chefs regarding kitchen mise en place.
  • Deliver food orders from the kitchen to customers rapidly and accurately.
  • Ensure proper restaurant setup, including daily cleaning, dusting tables and chairs, polishing glassware and cutlery, folding napkins, checking and replacing menu covers, preparing rubbish bins, and restocking restrooms.
  • Clean tools and work surfaces such as cloths, sinks, shelves, ashtrays, and cupboards.
  • Change rubbish bags and napkin bags as needed.
  • Assist in cleaning toilets or floors when required.
  • Adhere to and support the restaurant’s Quality Standards.
  • Maintain updated knowledge of food and beverage items.
  • Ensure food is served in accordance with safety standards.
  • Escort guests to their destinations (tables, bar, bathroom, exit, etc.).
  • Perform daily cleaning tasks assigned by Supervisors or Managers.
  • Clean and stock the pass areas (cutlery, crockery, condiments, etc.).
  • Continuously learn the menu and sequence of service.

2. Operations – Food & Beverage Tasks

Food Running

  • Deliver food to designated tables or areas as instructed by Chefs.
  • Notify the section waiter when food is ready to be served.
  • Learn the names of all dishes and undergo training on ingredients and preparation methods.
  • Escort guests to tables and other locations, ensuring appropriate guest etiquette.
  • Direct guest questions to waiters or managers promptly.
  • Assist waiters in clearing tables when returning from food running or when requested.
  • Report any issues such as spills, dirty restrooms, or breakages to supervisors.

 

 

Drinks Running

  • Deliver beverages to the correct tables or destinations.
  • Serve drinks according to seat numbers.
  • Learn all drink items, including cocktails, and attend relevant training.
  • Serve beverages in the appropriate style (e.g., ladies first, proper pouring techniques).
  • Assist with clearing tables when required.

 

3. People Management

  • Assist colleagues whenever needed to ensure smooth operations.
  • Support training and orientation of new joiners.

 

4. Communication

  • Maintain clear communication between the kitchen and service teams.
  • Carry food and beverages to tables based on Pass Waiter instructions and notify the section waiter accordingly.
  • Assist with table clearing when needed.
  • Attend staff briefings and actively participate in discussions.

 

5. Leadership Responsibilities

  • Ensure guests receive the highest level of service to maintain consistent satisfaction.
  • Maintain food and beverage quality standards as per restaurant policies.
  • Understand the full operation of the restaurant and respond to operational changes as directed by management.
  • Attend training sessions and review training materials to continuously improve knowledge.
