Job Description:

We are seeking a skilled and passionate Head of Bakery to lead, manage, and innovate our bakery operations across multiple branches. The ideal candidate will bring deep technical baking expertise, team leadership, and a strong sense of creativity to ensure consistent product excellence and smooth daily operations.

Key Responsibilities:

  • Lead, mentor, and supervise bakery teams across multiple branches 

  • Maintain exceptional quality, consistency, and presentation of all baked goods

  • Develop new and seasonal recipes for breads, viennoiseries, cakes, and pastries

  • Ensure adherence to hygiene, food safety, and cleanliness standards at all locations

  • Optimize production schedules and workflow to meet daily demand efficiently

  • Oversee ingredient sourcing, inventory control, and cost management

  • Collaborate with café and kitchen teams to align food offerings and service flow

  • Conduct regular product tastings, quality checks, and staff training sessions

  • Handle customer and internal feedback to improve product and process continuously

  • Participate in hiring, onboarding, and developing bakery team members

  • Implement systems to reduce waste, improve yield, and maintain profitability

  • Work closely with senior management on seasonal product planning, displays, and promotions

Requirements:

  • Minimum 5 years of leadership experience in a bakery or production kitchen, preferably within the UAE

  • Strong knowledge of artisan breads, viennoiserie, patisserie, and modern baking techniques

  • Experience in recipe development, scaling production, and display presentation

  • Knowledge of bakery equipment, dough fermentation, and food safety regulations

  • Strong team leadership, planning, and communication skills

  • Ability to manage multiple locations with consistent standards

  • Detail-oriented, hands-on, and committed to delivering premium bakery experiences

  • Comfortable working in a fast-paced environment with tight production timelines
